Dessert Christmas Salsa (mango salsa)
Here is a delectable and seasonally sweet and tangy salsa that I call Dessert Christmas salsa. With seasonal ingredients (mango, arugula, onion and garlic) all considered superfoods, this recipe adds heaps of important vitamins and minerals to your diet. Mangoes, high in vitamin C and potassium, help maintain a healthy heart rate and blood pressure. Both onions and garlic provide your immune system with bug-fighting nutrients which help fend off seasonal colds and allergy symptoms. As for arugula, this leafy green gets its own spot in the lime light in this delicious dish.
Ingredients to serve 6
1 Ripe Mango, cubed
3 Small Tomatoes, diced
1 TB Lime Juice
1/3 Cup Arugula, chopped
1 medium onion, chopped

1 Tsp. Olive Oil
Salt & Pepper to taste
Combine all ingredients in a medium sized mixing bowl. Add salt and pepper to taste. Serve fresh, or store in the refrigerator overnight for a more deeply flavored salsa.
