Ingredients to make 12 servings:
- 2 plum tomatoes, chopped
- 1 ripe avocado – peeled, pitted and chopped
- 1/4 cup finely chopped red onion
- 1 clove garlic, minced
- 1 tablespoon snipped fresh parsley
- 1 tablespoon chopped fresh oregano
- 1 tablespoon olive oil
- 1 tablespoon red or white wine vinegar
- 4 ounces crumbled feta cheese
Easy Directions
In a bowl, gently stir together tomatoes, avocados, onion, and garlic. Mix in parsley and oregano. Gently stir in olive oil and vinegar. Then stir in feta. Cover, and chill for 2 to 6 hours.

With seasonal ingredients (mango, arugula, onion and garlic) all considered superfoods, this recipe adds heaps of important vitamins and minerals to your diet. Mangoes, high in vitamin C and potassium, help maintain a healthy heart rate and blood pressure. Both onions and garlic provide your immune system with bug-fighting nutrients which help fend off seasonal colds and allergy symptoms. As for arugula, this leafy green gets its own spot in the lime light in this delicious dish.
Ingredients to serve 6
1 Ripe Mango, cubed
3 Small Tomatoes, diced
1 TB Lime Juice
1/3 Cup Arugula, chopped
1 medium onion, chopped
1 Jalapeño pepper, seeded and diced (amount may vary according to taste)
2 Cloves Garlic, or 1 Tsp. Garlic Powder
1 Tsp. Olive Oil
Salt & Pepper to taste
Easy Directions:
Combine all ingredients in a medium sized mixing bowl. Add salt and pepper to taste. Serve fresh, or store in the refrigerator overnight for a more deeply flavored salsa.
