Today’s Fresh Best Salsa Recipe:
Pineapple and Chipotle Salsa
Fish is both healthy and delicious, particularly grilled tuna with its hearty, meaty texture and mild taste. You may, however, prefer a fish with a stronger flavor; in that case use salmon (I like filets of wild salmon). And one of my all-time favorite ways to build great flavors into these wonderful proteins is the addition of a spicy homemade salsa. So when you’re thinking about grilled tuna or grilled salmon, the best salsa is one that is sweet, sour, spicy, and smoky. Yes, I’m talking about Pineapple and Chipotle Salsa. (The chipotle chili is really the star of this show.)
How to Make This Fresh Homemade Salsa:
1 cup diced fresh pineapple
1/4 cup finely diced green bell pepper
3 tablespoons finely chopped scallions (white and light green parts)
1 lime, juiced (or 2 T freshly squeezed orange juice)
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon seeded and minced chipotle chile in adobo sauce
In a small bowl, mix all the salsa ingredients together. Cover and let stand at room temperature until ready to serve.
